- To assist the Head Chef in the smooth running of the kitchen ensuring that all areas of the kitchen are maintained to Fairmont St Andrews standards.
- Working together with the Head Chef to supervise and coordinate the kitchen service with other departments
- To ensure all health and safety, and food hygiene procedures and guidelines are followed rigidly and documented as necessary.
- To coordinate, execute and fully document training of kitchen staff while motivating at all times.
- To develop menus, keep costs and wastage down and maintaining food costs within various menu pricing.
- To assist the other sections in preparing and cooking food according to business requirements.
- To cook any food on a daily basis according to business requirements.
- To assist the Head Chef in interviewing and recruiting staff for the kitchen.
