- Ensure the day to day functioning of the section.
- To follow and ensure in particular kitchen standards procedures, Health Regulations, recipes, portion size and cleaning schedule.
- To ensure that the mise in place for the section is according to business level, ready for service.
- To report any broken and faulty equipment, any derivations of agreed standards on any goods or products working with.
- To ensure proper food storage including ensuring stock rotation, labeling with date, product specification and temperature control.
- Maintain at all time a high quality standard of work with focus of minimum wastage to ensure maximum profit.
- Cleaning and hygiene checklist to be filled out and passed it to Sous Chef.
- Set up and break down on buffet for daily as well as special events.
- To prepare and assist in all preparations of Food items in accordance with kitchen standards
- To ensure a constant clean as you go approach during their shift.
- Maintenance of all kitchen equipment to include cleaning and maintenance.
- In absence of the Chef the Partie and Demi Chef, the Commis chef executes also tasks not shown in the job description to the best of his/her abilities to ensure the smooth and proper operation of the kitchen department.
- To try to be self-reliant working with minimal control and direction with the aim to become a Demi-Chef de Partie.
- The Commis chef joins all staff meeting and briefs as announced.
- Do not waste energy, make sure ovens; machines and lights are turned off when not in use.
- Maintains at all times the highest standard of personal appearance in connection with clean uniforms (as assigned to his position), cook's hat (as assigned to position) and proper working shoes.
- Maintains at all times the highest standard of personal hygiene in connection with being shaved, haircut and having clean and cut fingernails (where applicable)
- Maintains at all times friendly and professional relations with other departmental and non-departmental personnel. Shouting or other violent actions are not permitted within the hotel.
- Adheres to Hotel regulations applicable to all hotel personnel.
- Any other duties as necessary as requested by the executive Chef to ensure the efficient and successful operation of the Kitchen Department.
