This unique venue in the Stroud area, is currently seeking an experienced Kitchen Manager, to ensure delivery of their fresh and healthy food offering.Working well in a high paced environment under pressure, you will also lead the team to make sure that they deliver a high quality but personable service to all areas whilst minimising any waiting times.The kitchen is centred around the wood fired oven and the grill. They focus on using local and/or organic ingredients wherever possible. An all day menu with brunch, lunch and grill dishes is in place, plus regular specials and pizzas on offer from Thursdays. They also cater for a range of events and have a dedicated following of regulars.The salary on offer is up to £32,000 per annum DOE, and this is based on 37.5 hours per week.It would be desirable if you have an interest in real ales and their production, and also in cooking with beer and brewery by-products, including a knowledge of sourdough.Essential Qualities that they are looking for from a passionate chef include:● Experience in producing costed menus across a number of different areas● Management experience of a large team● Ability to manage GP & wastage to attain the KPI● Being presentable & professional● Passion for organic, fresh local ingredients● Experienced in maintaining kitchen hygiene, and health and safety within statutory guidelines● A keen eye for detail● Experienced in continuously improving service, prep, menus, ordering procedures and managing a large team● Ability to oversee kitchen maintenance and source the relevant resources including trades people● Competent when working with kitchen machinery● Works well under pressure● Strong team leader● Flexible● Computer competence (e-mail, spreadsheets including formulae)● Reliability● Conscientious● Aptitude for learning● Proactive decision makerKPI's - You will be expected to;● Maintain staff vs revenue at 35% of turnover● Operate ingredient costs at 30% food of turnover● Health and safety meetings and update policies where required● Maintain the 5* hygiene rating● Achieve and maintain 60% organic and or/local ingredientsMain responsibilities will include, but not limited to;● Ensure food hygiene regulations are met, including daily tasks, temperature records and an open and close checklist● Preserve Health & Safety standards within the kitchen● Control and direct food preparation and related activities● Together with the Food & Beverage Manager, continually develop our menu, using local and/or organic ingredients wherever possible● Develop wedding and seasonal buffet menus with the F&B Manager/Events Manager● Ensure portion sizes are controlled to maintain required kitchen GP%● Identify suppliers and ensure regular supply of stock● Ensure monthly stock-take is completed to the deadline● Ensure food purchases meet KPI, and JIT stock turn around● Recruitment (in conjunction with Food & Beverage Manager) to ensure adequate staffing levels● Liaise with the Food & Beverage Manager on a weekly basis to schedule kitchen staff to ensure required level of staffing is maintained for the kitchen to meet the KPI● Approve holiday and absence requests and return to work interviews● In conjunction with Food & Beverage Manager, complete 1:1 team appraisals● Maintain high customer service
