
Trainee Chef

- To always maintain and manage the required high operational and personal standard of hygiene and presentation within the team in compliance with the Food Safety Act
- To seek authorisation to identify food recovery requirements at each shift, ensuring Company Procedures for the storage and re-use of these items are adhered to using the Assured Safe Catering /HACCP guidelines.
- Develop the ability to exercise economy of food and fuel thus minimising waste.
- To undertake, as directed, opening up and closing down procedures within the kitchen and associated areas with particular emphasis on security.
- To learn the correct procedures for monitoring temperatures of fridges, freezers, hot cabinets and services.
- To undertake these tasks as directed by the line supervisor.
- To ensure that all foods served under your control are served and held at the required temperatures (probed and recorded)
- Ensure that the kitchen area that you are working in is always clean and hygienic.
- To comply with Food Safety and Health and Safety Legislation. Through training, develop a working knowledge of COSHH regulations, correct manual handling and accident reporting procedures.
- To follow Company Quality Procedures laid down and specifically when you are responsible for receiving a delivery, checking all issues as directed, completing the relevant documentation and communicating any discrepancies with the Senior Chef.
- To continue to develop one's own skills / knowledge within the position
- Good numerical and communication skills, must be able to demonstrate effective verbal and written communication
- Able to work within a team environment
- Able to demonstrate attention to detail and adherence to standards
- Proven track record of employment within the catering industry(desirable but not essential)
- Experience of working in a military environment (desirable but not essential)
- On-the-job training with experienced professionals
